El Sol Omelet Recipe!


El Sol was wonderful enough to send us several of their salsa's! I used them to create my own unique recipes! Check out our El Sol review here! The El Sol Salsa Omelet pictured above is absolutely amazing check out the recipe below:

EL SOL Omelet

2 Eggs Stirred
1/2 Potato Diced
1/8 Cup Mushrooms diced
1/2 Whole Onion Diced
1/4 Cup Your Favorite Meat Prepared (Ham, Chicken for a hearty dinner omelet or Sausage, Bacon for a Breakfast omelet)
1/4 Cup Coconut Oil
1 Cup Coconut Oil
1/4 Cup El Sol Salsa
1 Cup Shredded Cheese

Serves 1 you can double, triple or make as much as you want using same recipe (just be sure you don't make the omelet to big to flip as for me I prep enough for the whole family then make each omelet separate)

In separate pan cook potato's, onion, and meat until done about 20 minutes adding potatoes and 1 cup coconut oil first and then adding in onion and El Sol salsa, mushroom and prepared meat about 5-10 minutes before potatoes have finished.  Set aside.
Heat 1/4 Cup Coconut Oil in pan on medium heat add stirred eggs. Flip eggs as they cook keeping it in one whole piece. Add your cooked potatoes mixture when eggs are cooked and easily flip in one piece. Fold eggs over potato mixture. Take off heat and top with cheese! Allow to cool and serve!

  2. This looks great! I've never cooked with coconut oil. Is it similar to more traditional cooking oils? The El Sol salsa sounds fantastic. Here's hoping it's available in Virginia soon.
