Flexible Dieting Chicken and Broccoli Stir Fry Recipe

Trying to diet and having trouble. Do you need a more flexible approach? Healthy Eater is here to help! I find dieting especially hard with back to school. The kids have so many different groups clubs and activities that it seems we are constantly going. I am the worst to order fast food. With Flexible Dieting you can eat the foods you like and not feel guilty.

Check out the Chicken and Broccoli Stir Fry below! Stir Fry is one of my favorites. Instead of going and getting take out Chinese you could try making this at home. You could even easily freeze leftover portions.  Or you could double the recipe and freeze the extra for days you don't have time to cook.

Chicken and Broccoli Stir Fry

Serves 1
  • 8 oz boneless skinless chicken breast
  • 1 and 1/2 cup broccoli florets
  • 1 red bell pepper
  • 1/2 cup onion
  • 1 and 1/2 ounces snow peas
  • 1/4 cup brown rice (raw weight)
  • 1 clove fresh garlic
  • 1/2 tbs peanut oil
